Sweet potato w/ lemony yoghurt, hazelnuts & currants.
Pair this salad with your choice of protein (chicken, beef, lamb…)
Bake sweet potatoes whole for an hour, cut in half.
Shallow fry in butter with hazelnuts and currants.
Combine Greek yoghurt, honey, garlic, lemon juice.
Drizzle your dressing on top.
Garnish with parsley.
