Minced Mushies
Half an onion finely chopped
2 cloves of garlic minced
Small handful of kale finely chopped
500 g beef mince
6- 8 jumbo mushrooms
Pesto
Olive oil, ghee or butter
salt and pepper
Preheat the oven to 180.
Sear off half an onion in a pan with minced garlic and a bit of kale (this is optional, you can add anything you like) in oil of choice.
Whilst onion is cooking remove the stems from the mushrooms and add top down in a lined pan. I used 6 jumbo mushrooms.
Either drizzle with olive oil or add a slice of ghee/butter to each mushroom.
Once onion is cooked remove from heat and mix through the mince. Add salt and pepper and combine. Stuff the mushrooms with the mix. Dollop with pesto.
Bake for 35-45 mins until they are juicy, golden brown and the mince is cooked.
Serve on its own or with salad, roast veg... whatever no rules.
