Choc, Coconut & Raspberry balls
I fell in love with these flavour bombs at a health retreat and have been making them ever since. Here is my recreation…
Ingredients:
🥥 2 cups medjool dates
🥥 2-4 tbsp cacao powder (depending on how rich you like it).
🥥 2 tbsp coconut cream
🥥 1 cup desiccated coconut
🥥 12 frozen raspberries
Method:
1. Blend dates, coconut cream and cacao in blender.
2. By hand, stir through 3/4 cup desiccated coconut coconut with date mixture.
3. Divide the date mixture into 12 and wrap the mixture around a frozen raspberry.
4. Then roll into balls and roll in the remainder of the desiccated coconut.
Option to add crushed nuts and seeds into date mixture with the desiccated coconut.
